Peanut & Chocolate Overnight Oats

If you usually have the Monday blues (we know the feeling), this recipe will definetily lift up your Monday morning! As the name suggests, you make them ahead and leave them in the fridge overnight, ready to grab and go in the morning. We usually recicle old peanut butter jars to carry them. Not only are these pots delicious, but they are packed full of fibre from the oats, boosted with protein from yogurt, and offer a good source of omega 3 fatty acids from chia seeds.

Peanut & chocolate overnight oats

Serves 1

40g oats
100g natural Greek yogurt
120ml milk
1 tablespoon chia seeds
1 tablespoon maple syrup or honey
1 tablespoon peanut butter
1 tablespoon cocoa powder
1 tablespoon chopped peanuts

Put all the ingredients, except the peanuts, into a small mixing bowl and whisk together. Spoon into a jar and sprinkle the chopped peanuts on top. Seal tightly.

Refrigerate overnight and it is ready to go!


You can replace the milk and Greek yogurt for plant based options.

Add some extra peanut butter before serving for extra peanut flavour, or add some chocolate nibs like we did on the picture.
